CHARLOTTE, N.C. - If you have always been a fan of SouthPark's popular Upstream restaurant, there is now a really good reason to head over to M5 Modern Mediterranean. Harper's Restaurant Group president Tom Sasser recently announced that Upstream's Executive Chef Scott Wallen has now taken over responsibilities as Executive Chef at M5 Modern Mediterranean.

Chef Wallen's more than thirteen years experience in the culinary field has taken him across the country from Michigan to Nevada and back to Charlotte, working at restaurants such as Spago in Chicago and Wolfgang Puck's contemporary Postrio Bar and Grill in Las Vegas. At Postrio, he had the opportunity to work side by side with both Thomas Keller and Alain Ducasse. His passion for fresh product allows him the ultimate in creative culinary opportunities, offering guests something truly special each time they dine at Upstream or M5.

Chef Wallen's immediate influence on the M5 winter menu can be seen in some of the new, heartier, more "warm the soul" type of comfort food selections now being offered. Many of the restaurant's signature dishes will be prepared in either a hickory-fired oven or over a wood grill. Some of Chef Wallen's newest entrees include the Slow Braised Lamb Shank, with Anson Mills polenta and wood oven roasted chestnuts; a Chef's daily whole roasted fish selection; and, Stuffed Pork Chop with Morels, served with smashed potatoes and apple chutney.

Chef Wallen is also offering new, delicious robust pasta dishes which allow guests the opportunity to choose either half or full size portion. Now being featured on the menu are Seafood Orichetta with squid, shrimp, mussels and topped with charred tomatoes; Veal Spaghettini, a delicious blend of marinara sauce, Veal Bolognese and Mozzarella cheese; Springer Mountain Chicken Breast with Garlic-Herb Linguini with prosciutto and fresh peas.

One of the most popular items on M5's menu is its fresh made flatbreads. Great as an appetizer or small meal, Chef Wallen's featured selections include Prosciutto & Fig, Tomato & Mozzarella, Four Cheese & Eggplant, Mushroom & Sausage and Leek & Sweet Shrimp. He's also introduced some new starters including the Cornmeal Crusted Calamari with zucchini and lemon aioli and a Braised Short Rib with porcini gnocchi and sweet onions.

M5 Modern Mediterranean guests will also have the opportunity to catch Chef Wallen in action every week when he showcases his Dinner at the Chef's Table experience. Available on Friday nights only, the special dinner presentation is a five course, seasonally-driven tasting menu. It is prepared directly in front of guests who are seated at the counter overseeing the open kitchen as well as to guests who prefer to dine in the main dining room. The menu will be spontaneous and promises to utilize only the freshest ingredients from local farmers, artisan cheese craftsman and dayboat captains. It's a fabulous experience for any "foodie".
